Grilled Swordfish with Linguini

This recipe came about when we had some leftover grilled swordfish steaks, but you can easily grill a couple steaks for the recipe.  The image shows a grilled steak not cut in cubes like the recipe suggests. This recipe serves 2. Revised Sept 2023.

Ingredients:

  • 1 or 2 Grilled Swordfish Steaks cut into 1 inch cubes
  • ½ Pound linguini
  • ¼ Cup olive oil
  • 3 Cloves minced garlic
  • ½ Cup white wine
  • ½ Cup chicken broth
  • 2 Tomatoes, chopped or 1 cup grape tomatoes halved
  • 2 Tablespoons chopped fresh parsley
  • 2 Tablespoons chopped fresh basil

Directions:

Cook pasta to package directions for firm pasta.

Heat olive oil in large skillet and sauté the garlic just until it becomes fragrant. Add the wine and boil for 30 seconds, then add the broth and simmer for a couple minutes. Add the basil and half the parsley. Drop in the swordfish to warm.

Drain pasta, but reserve 1 cup of the water. Add pasta to sauce and cook for 1-2 minutes. Add a little reserved water if needed. Use remaining parsley for garnish.
