Breakfast Polenta In About 60 Seconds

Healthy breakfasts are always something that are illusive for busy people. It’s much easier to pick up a muffin or a couple donuts on the way to work than it is making a healthy breakfast.

Lately, I’ve been trying to stay away from too much “white flour” in the morning, so even toast and jam isn’t an option right now. So what can you do?

A little planning will help you with your goal.

Once every couple of weeks I get the Quaker Corm meal out and make a batch of what they call on the back of the package “corn meal mush”. Others might call this “yellow grits”. Both names are not very appealing. On the other hand, “polenta” sounds fine. Give anything a European name and it becomes more sophisticated.

Make the corn meal and pour it into a 9″ X 9″ pan. Refrigerate for a couple hours then cut in into 3″ squares. Store for up to two weeks in a plastic container.

I find that 1½ squares is a perfect serving in the morning. You may be fine with just one, or go for two squares. So, for a healthy delicious breakfast, just put the squares into a bowl and microwave for 60 seconds. When hot, smash with a spoon and add a little milk. Top with some maple syrup or brown sugar and enjoy.
