Elegant Meatloaf Dinner Party

“Elegant” meatloaf? An oxymoron?

Every once in a while I like to try something a little different. Usually you try to make something special for a dinner party. A nice roast beef or roast lamb, lasagna, baked stuffed shrimp, etc. But I thought it was time to try something people typically don’t associate with a dinner party. Especially this group.

My wife gets together with a few long time friends 3 or 4 times a year. Each time it’s at a different house. This time it was her turn, and I typically do the cooking so she can have fun with (what they call) “the wild bunch”.

We had been to a local restaurant for dinner recently and I had their meatloaf. It was grilled, served over mashed potatoes and topped with brown gravy and crunchy fried onions. I thought, with the right meatloaf recipe, this wouldn’t be hard to replicate at all.

Boy, was it a hit. It’s actually easy to make because the meatloaf can be made a day ahead and grilled when you serve. The other ingredients are basic… evny crispy fried onions come in a can.

Typically at a dinner party I like to serve platters of food to the table and then let people serve themselves what they would like. With this meal, it’s important to plate the food because presentation is important. A slice of grilled meatloaf on top of a mound of potatoes with gravy and crispy onions is a beautiful sight.
