Crispy Grown-Up Chicken Fingers

They don’t need to be just for the kids. You can also substitute fresh herbs for the dried herbs listed below, just double the amount. Serves 2 for dinner, 4 for appetizers.

Ingredients:

  • 1 Cup panko breadcrumbs. You can substitute 1/2 cup regular breadcrumbs plus 1/2 cup corn meal
  • 1/4 Cup Parmesan cheese
  • 1/4 Teaspoon garlic powder
  • 1/4 Teaspoon thyme
  • 1/2 Teaspoon parsley
  • 1/4 Teaspoon paprika
  • A few grinds of pepper
  • 1 Pound chicken breast
  • 1/4 Cup olive oil
  • Spray oil
  • Fresh chopped parsley or chives for garnish

Directions: Preheat oven to 375° F

Cut the chicken in strips about 1/2 inch wide. Spray a baking sheet with cooking spray. In a shallow bowl, mix the panko, cheese, herbs and spices. In another shallow bowl, pour in the olive oil.

Dredge the chickens in the oil then press into the breadcrumb mixture until all sides are completely coated. Carefully place on the baking sheet keeping them at least 1 inch apart. Bake for 25 minutes flipping them once halfway through. Internal temperature should be 165° when done. Garnish with parsley or chives and serve with your favorite dipping sauce.
