It’s Betta With Feta Twice-Baked Potatoes

Everything’s betta with Feta. This recipe serves 4.

Ingredients:

  • 4 Russet potatoes, skin on and washed well
  • 1/3 Cup Feta cheese
  • 1/3 Cup sour cream (or plain yogurt)
  • 1 Tablespoon olive oil
  • 1 Tablespoon chives, chopped

Directions: Preheat oven to 400º F.

Cook potatoes on oven rack about 45 minutes or until fork tender. Remove from oven and let cool until you are able to handle them.

Reduce oven temperature to 375º F.

Cut each potato in half the long way and scoop out the flesh into a mixing bowl. Leave about 1/8 to 1/4 inch potato in each shell. Add the cheese, sour cream, oil and chives and mash until smooth. Stuff each potato shell with the potato mixture and put on a baking sheet. Bake for 12 to 15 minutes until warm through and the top is lightly browned.
