
The key to this recipe is finding a pan that the potatoes, when cut in half, fit very snug. Recipe serves 2 or 3.
Ingredients:
- 3 Tablespoons butter
- 2-3 Tablespoons grated Parmesan cheese
- 2-3 Medium size red, white or yellow new potatoes
- Chopped fresh chives or parsley for garnish
Directions: Preheat oven to 375° F
Cut the unpeeled potatoes in half lengthwise. Find an oven proof pan that the potatoes will just fit into. You want them snug, touching each other and the sides of the pan. for this recipe, a cast iron skillet usually works fine.
Place the butter into the (empty) pan. Pop it into a hot oven a minute or two just to melt the butter. Remove from the oven and sprinkle the cheese on the melted butter. Place the potatoes cut side down on top of the cheese/butter mixture and return to the oven. Bake uncovered 40-45 minutes or until potatoes are tender. Garnish with chives or parsley.
