Susie’s Cheesy Potatoes

This is a staple at all our family parties. You can scale it down for just a few people. The recipe below will serve 6-8 people.

Ingredients:

  • 2-3 Pounds red bliss potatoes. Peel, but leave some red on them for color. Slice 1/4 inch thick.
  • 3 Tablespoons grated Parmesan cheese per layer
  • 2 Tablespoons flour per layer
  • 3-4 Tablespoons milk per layer
  • S & P
  • Vegetable spray

Directions: Preheat oven to 350° F

Spray an 8″ X 8″ casserole dish liberally with Pam and divide the potatoes in 3 or 4. Layer the potatoes, flour, milk, butter and S&P as indicated above. Repeat for all 3 or 4 layers. Remember to omit the flour on the top layer and you should drizzle a little more milk on it, about 1/3 cup. Spray the top layer with Pam and cover with foil.

Bake for 45 minutes then remove foil and cook for an additional 15 minutes to brown the top. Cook until potatoes are fork tender. 3 layers of potatoes will cook a little faster than 4.
