Beet Sliders a Pleasant Surprise

This recipe has been adapted from a Diners, Drive Ins and Dives episode. Everyone raved so much in the episode, I just had to try it. To say the least, my guests and I were blown away. I made them for a group of people who were coming over for cocktails and a “bite”. Several people were reluctant at first, but it was the only thing I made to eat 🙂

Boy were they surprised.

Ingredients:

  • Large pot of salted water
  • 3-4 whole beets
  • 2-3 Tb of pickling spices
  • 1/2 red onion sliced very thin in half moons
  • 12 Slider buns
  • 1 Bottle Green Goddess Dressing (you can make this, but the bottle works fine)
  • Olive oil
  • Salt

Directions:

Add the spices to the pot of water and bring to a boil.

Wearing food service gloves (a necessity) peel the beets with a potato peeler. Drop them in the boiling water and cook for 1 to 1½ hours until beets are tender through.

Run under cool water and let them sit to cool to room temperature.

Slice the beets into 1/4 to 3/8 inch slices. You will usually get 3 to 4 slices per beet. You need one slice per slider so slice accordingly.

Preheat frying pan with just a little oil. Sauté beets until they are glossy and tender. 2 to 3 minutes per side.

Cut the buns and place open side up on a cookie sheet. Toast under broiler until golden.

Assembly:

Place one slice on the bottom of bun. Top with green goddess dressing and some thinly sliced red onion and top half of the bun.

Serve 2 sliders per person. Serves 6
