White Sauce (for Creamed Onions)

We’ve used fresh onions in the past for this recipe, but once you load them up with cream sauce you can hardly tell they are out of a bag.

Also, for this dish, we use the “Medium” sauce below.

Ingredients:
One package frozen
pearl onions
Use medium sauce
to the right.
Medium Sauce:
2 Tablespoons butter
2 Tablespoons flour
1/4 Teaspoon salt
1 Cup milk
Dash of white pepper
For A Thicker Sauce:
3 Tablespoons butter
4 Tablespoons flour
1/4 Teaspoon salt
1 Cup milk
Dash of white pepper
For a Thinner Sauce:
1 Tablespoon butter
1 Tablespoon flour
1/4 Teaspoon salt
1 1/2 Cups milk
Dash of white pepper

Directions:

Cook onions following package directions. Drain and reserve.

Melt butter in a saucepan over low heat. Blend in flour, salt and pepper. Add the milk all at once. Cook quickly stirring quickly with a wire whisk until it thickens and bubbles. Pour over the onions.
