Most people go out for fried food. One reason is frying on the stove top is sometimes an issue, but the main reason is the batter.
You really only need an inch or two of oil to get great results. Make sure the pan you use is tall enough so you don’t have spill overs, and you use enough oil so it stays hot when you add the food. It’s also good to have a good exhaust that vents to the outside.
Other than that, the batter is the hurdle.
Here are three easy tempura batter recipes to get you over that hurdle.
Basic Tempura Batter
Ingredients:
- 2 Cups all-purpose flour
- 3 Egg yolks
- 2 Cups ice water
Directions:
Sift flour. Combine egg yolks and water in large bowl over ice. Beat with whisk until well blended. Add flour gradually, turning and turning mixture from bottom with spoon. Do not over-mix. Flour should be visible on top or batter will become gummy.
Keep batter over ice while dipping and frying.
Yield about 4½ cups.
Beer Tempura Batter
Ingredients:
- 2 Eggs
- 1 and 1/3 Cups sifted all purpose flour
- 1 Teaspoon salt
- 1 Cup flat beer
Directions:
Place eggs, flour and salt in a bowl. Mix well. Gradually stir in beer and beat just until smooth. Let stand for 1 hours or refrigerate overnight.
Yield about 2 cups.
Golden Tempura Batter
Ingredients:
- 1 Large egg
- 1 Cup water
- 1 and 1/4 Cup sifted all-purpose flour
Directions:
Beat eggs and water together., Add flour all at once and beat just until smooth. Let stand 1 hour or refrigerate overnight.
Yield bout 2 cups.
