Need something quick and easy for a snack? Or maybe heading over to a friends house and don’t want to show up empty handed? These bruschetta are the trick. Easy to prepare with simple ingredients… and they are delicious.
Ingredients:
- 1 Small loaf of crusty Italian bread cut in 1 inch slices
- 2 Cloves garlic, crushed
- 1/2 Cup extra virgin olive oil
- About 20 large basil leaves
- 4 to 5 Ripe Roma tomatoes (depending on size) sliced about ¼ inch thick
- 1/2 Pound fresh Mozzarella cheese
- Kosher salt
Directions:
Preheat oven to 375º F
Slice the bread and place on a cookie sheet. Toast in oven until golden brown for 15 to 20 minutes, turning once so they brown on both sides.
While the bread is toasting, heat the oil in a small sauce pan. Add the garlic and cook just to make the oil fragment and soften the garlic. Be careful not to brown the garlic. Remove from heat.
When the breads are done, arrange on a serving platter. Spoon about 1 teaspoon of the oil/garlic mixture on to each bread. Top with a slice or two of tomato and a basil leaf. Scoop one tablespoon of cheese on top and a pinch of Kosher salt.
Serve immediately.
Variation: For more flavor and an even better presentation, drizzle a tiny amount of balsamic glaze over the cheese.
