We have a couple recipes that require fish stock. Boiling fish bones is not an option for The Net Gourmet. Here’s a simple work around when you need some stock.
Yes. We use a can of sardines. When you are done with this, there is no way anyone will know sardines were involved… Trust me.
Ingredients:
- 1 Can sardines or herring
- 1 Quart water
- 1/2 Onion cut in pieces
- 2 Stalks celery roughly chopped
- 1 Clove garlic, smashed
- Pinch of white pepper
- 1 Coffee filter
Directions:
Give the sardines a quick rinse under cool running water. Place them in a coffee filter and tie with some butcher’s string. You are making a little fish tea bag. Drop them in a 2 Qt. soup pot and add the water, veggies, garlic and pepper. Boil for 1/2 to 1 hour. Strain and use as fish stock.
I’ve recently used sardines packed with Jalapenos and it gave the broth a great little “kick”.
