Who doesn’t love bacon wrapped scallops, fish, chicken, even a “flip flop” as Guy would say.
But, then again, who isn’t looking for ways to cut back on the fat and calories? Do this and keep up the flavor with a lot less fat.
Replace bacon with Prosciutto. There is very little fat in Prosciutto so it doesn’t shrink up much so you can use less of it. This is good because it’s quite a bit more expensive than bacon. The thing is, the flavor is outstanding.
The Net Gourmet strongly suggests wrapping any white fish with it, dusting a little flour on it, then frying in just a little oil. The Prosciutto gets crispy like bacon and the fish stays moist and tender,
I found that buying the pre-packaged Prosciutto at the market is easier than asking the butcher for it. Most deli counter workers are programmed to slice Prosciutto paper thin. So thin some would say it only has one side 🙂 The pre-sliced Prosciutto is sliced a little thicker and holds up to the frying much better.
