This is a very easy to make, tasty meatloaf recipe. It will serve 4.
Ingredients:
- 1 to 1¼ pound ground beef
- 1/3 cup chopped onion
- 1/3 cup chopped red bell pepper
- 1 Egg
- 1/2 Cup instant oatmeal
- 1/2 Cup milk
- 1/2 Cup red sauce (split in two)
- 1/4 Cup chopped fresh parsley
- 1/4 Teaspoon of dried thyme or oregano
- Salt & Pepper
Directions: Preheat oven to 375° F
In a small microwave bowl, mix the milk and oatmeal together and heat in microwave for 30-60 seconds, until the oatmeal absorbs all the milk.
Reserve 1/4 cup of the red sauce. Mix everything else together in a mixing bowl. Shape the meat mixture into a log and put in a greased loaf pan. Pour the remaining 1/4 cup of red sauce over the top. Bake for 1 hour or until the center is 160° F. Cool for 10 minutes before slicing.
Variations:
- If you don’t have instant oatmeal you can use regular oatmeal, plain or flavored bread crumbs or panko.
- Green bell pepper can be used instead of red
- A teaspoon of onion powder or garlic powder is a good addition
