This one comes from my mother. I had to watch her at one point to get the measurements. She never used tablespoons or measuring cups. It was a little of this and some of that.
It turns out to be a very easy meatball recipe that you can get prepared and cooked in just about 30 minutes.
Measurements below are for one pound of meat. That will render 6-7 meatballs at about 2+ oz. each.
Ingredients:
- 1 Pound ground beef (or a mixture of beef, pork and veal)
- 1/2 cup oatmeal or dried bread crumbs
- 1/4 Cup grated Parmesan cheese
- 1 Egg
- 1 Teaspoon each; salt, pepper, dried oregano, garlic powder and onion powder
- 1/4 Cup tomato juice or red sauce
Directions: Preheat oven to 350º F.
Mix all ingredients in a large bowl so everything is well incorporated. Roll into 1½” balls and place on a cookie sheet. Bake for 20 minutes.
Variations: Variations are easy with this. Use your imagination.
Fresh herbs like oregano and thyme can be substituted. Fresh garlic or chopped onions work great. Basil and especially fresh parsley are great.
You’ll find if you put the cooked meatballs in your red sauce for an hour or so, they will add great Italian flavor to your sauce.
