Fajitas

We typically make these when we have leftover steak, but you can cook a steak for it. The amounts below are very flexible. Whatever you have will work just fine. This recipe will make four 8 to 10 inch Fajitas.

Ingredients:

  • 1/2 Pound steak (cooked or uncooked) cut in 1/2″ strips
  • 1 Teaspoon chili powder
  • 1 Tablespoon fresh lime juice
  • 1 Clove garlic, minced
  • 1 Teaspoon butter and 1 teaspoon oil
  • 1/4 Teaspoon salt and pepper
  • 1 Green pepper (We used red in our image)
  • 1 Large carrot, cut in 2″ by 1/4″ pieces
  • 1/2 Sweet onion sliced
  • 4 Flour tortillas
  • 1 Cup shredded iceberg lettuce
  • For garnish: sour cream, salsa, shredded cheese, chopped cilantro

Directions:

Toss the beef with the chili powder, lime juice, garlic, salt and a pinch of pepper. Let marinate for 15 minutes or more. Heat a large frying pan to very hot. Add the butter and oil. If raw, cook the meat 3 or 4 minutes. Just until it is browned a little. If you are using cooked steak, just warm it through and cook the garlic. Remove from the pan to serving platter.

Using the same pan, add the carrots, onion and green pepper with a little more oil/butter if needed. Sauté on high for 4 or 5 minutes until they brown a little, but are still crunchy. Place on the serving platter with the steak. Serve on flour tortillas with your favorite garnish.
