New Life For A Leftover Steak

Here’s a recipe that will give new life to a leftover.

Ingredients:

  • 1/2 of any cooked rare steak (we use sirloin)
  • 1/2 Large white onion, sliced thin
  • 1/2 Loaf of French bread cut in 1/2 inch slices
  • 2 Tablespoons butter
  • 2 Tablespoons Red Wine Vinegar
  • 1/4 Cup Red Wine
  • 2 Tablespoons crumbled Blue or Feta cheese (or any cheese you like)

Directions:

Let steak come to room temperature then cut in very thin slices. Melt butter in frying pan and cook onions on medium heat until they are soft and golden. Toss in the sliced beef and stir to warm. You do not want to cook the steak any more than it already is, just warm it through.

Remove from pan and keep warm. Deglaze pan with vinegar and wine. Boil and reduce by half or more to create a sauce.

Assembly:

Place a slice or two of beef and some onions on each bread. Drizzle pan sauce over the meat then top with a few crumbles of cheese. Layout on a cookie sheet and pop under the broiler for 30 seconds or so, just to melt the cheese. Serve as an appetizer or a light lunch.
