On A Plate Burger Dinner

Tired of burgers on a bun? Try this… The ingredients list is kind of long, but it’s not complicated at all. Serves 2.

Ingredients:

  • 1 Pound ground beef
  • 2 Carrots cut in bite size pieces
  • 2 Stalks celery cut in bite size pieces
  • 1/2 Onion cut in 1/4 inch half moon slices
  • Small handful of fresh green beans with tips and tails removed
  • 5 or 6 Medium sized mushrooms
  • 1 Bay leaf
  • 1/4 Teaspoon dried thyme or 4 sprigs fresh
  • 1 Tablespoon tomato paste
  • 1 Tablespoon oil
  • 1 Tablespoon butter (more if you plan to fry the burgers)
  • 1 Tablespoon flour
  • 1 Cup beef stock
  • 2 Tablespoons chopped fresh parsley
  • 2 Tablespoons Worcestershire sauce
  • 2 Cups mashed potatoes

Directions:

Mix the meat with the parsley and Worcestershire sauce and make into two burgers. Make them a little thinner in the center and thicker around the outside to help them cook evenly.

You can prepare the mashed potatoes now. At this point start to cook the burgers on the grill, frying pan or broil them, whatever way you prefer. Cook for a total of 8 minutes for medium, 2 minutes more for well done. When done, remove to a plate, cover and let rest while cooking the vegetables.

While the burgers are cooking, in a medium sauce pan heat 1 tablespoon of oil. Cook mushrooms uncovered until they release all their water and it boils away. Add the carrots and cook covered for 5 minutes. Then add the celery, onion, green beans bay leaf and thyme. Cover and cook for about 10 minutes until vegetables are soft. Push the vegetables to the side of the pan and melt the butter in the center. When bubbly, add the flour and cook or about a minute. Mix in the tomato paste then whisk in the stock and bring to a boil. Once it thickens, remove the bay and keep the veggies and sauce warm on low heat.

To serve, place the burger on top of a cup of mashed potatoes and top with the vegetables and sauce.
