Steak and Pepper Stir Fry Sous Vide

This is a Sous Vide option for the original Steak and Pepper Stir Fry, but only if you are cooking a fresh steak for it. Use the original recipe if you are using leftover steak.

Mix together the stock, wine, soy sauce, and the black and red pepper in a bowl. Place the steak in a Sous Vide bag along with 3-4 tablespoons of the marinate. Seal and Sous Vide 90 to 120 minutes at 125 to 130ยบ.

When done, add any juices from the bag to the marinate and continue with original recipe. Do not cut the steak before browning. Instead of frying the sliced steak, brown the entire steak in the hot pan for 60 seconds on each side. Remove, then slice and reserve until you need it at the end.
