This recipe is adapted from a Julia Child recipe. At first it may seem there are too many redundant steps, but it really isn’t that confusing, and more importantly, there is a reason for each step. Following these steps will insure there are no dark rings around your yolks and the eggs are very easy to peel.
Ingredients:
- 6 or more eggs
- Water
- Ice
Directions.
- Lay the eggs in the pan and add cold water so the water is one inch above the top of the eggs
- Bring to a boil quickly over high heat. Remove from heat, cover and let stand 17 minutes.
- After resting time, scoop out the eggs and put then in a bowl of ice water. Chill for two minutes. While chilling, bring the original pot of water back to a boil.
(This chilling step shrinks the body of the egg from the shell) - Transfer the eggs back to the boiling water and boil for another 10 seconds.
(This step expands the shell) - Now transfer the eggs back to the ice water and leave there 15 to 20 minutes.
- Eggs are now ready to peel.
