Corn Salsa

This can easily be made with your favorite store bought salsa or from scratch. Either way is fine, and just as good. This is a great side dish for burrito bowls and also can be served in burritos or on tacos. Serves 2.

Ingredients:

  • 1 Cup frozen corn
  • 1/4 Cup chopped sweet onion
  • 1/4 Cup Chopped red pepper
  • 1 Jalapeno seeded and chopped (optional)
  • 1 Scallion chopped
  • 1/3 cup store bought salsa*
  • 1 Tablespoon fresh lime juice
  • 1 Tablespoon chopped fresh cilantro or parsley
  • S & P to taste

Directions:

Cook corn according to package instructions and drain. Mix it with the remaining ingredients, reserving a pinch of the herbs for garnish. Refrigerate for 1/2 hour or more to allow flavors to mingle. Serve cold.

*Instead of the store bought salsa, use 1/3 cup tomato sauce mixed with 1/4 teaspoon (or more) ground cumin and 1/4 teaspoon chili powder and a splash of siracha.
