This is a great one when you have some leftover mashed potatoes. The list of veggies and herbs below can easily be adapted to whatever you have on hand Serves 2.
Ingredients:
- About 2 cups of leftover mashed potatoes
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped white, green or red onion
- 1 Tablespoon fresh chopped chives
- 1 Tablespoon fresh chopped parsley
- 1 Lightly beaten egg
- Pinch salt and pepper
- 4 Tablespoons grated Parmesan cheese (cheddar works well too)
Directions: Preheat oven to 375° F
Combine everything (except the cheese) in a bowl. Mix well. Separate the mixture into 4 hockey puck shaped mounds and place on a greased cookie sheet. Top each with a tablespoon of cheese. Place in preheated oven and cook for 20 to 30 minutes.
They can also be cooked in a frying pan with about 1/4 inch of oil. Cook on medium for about 6-8 minutes per side. Turn only once. Top with the cheese the last 5 minutes and cover the pan at that point to melt the cheese.
