Replicating hand cut, twice fried restaurant French fries at home (without a deep fryer) has always been a goal. The Net Gourmet’s Garlic Oven French Fries are a pretty good attempt, but I was looking for something I could do on top of the stove.
When you are cooking for one or two. here’s a good way to get French fry taste at home.
Side Dish For 2
- 2 Red or white new potatoes
- Spray oil like Pam
- 1 Teaspoon your favorite dry rub like Rudy’s
- About 3 tablespoons canola oil
Directions:
Peel both potatoes and wrap each with plastic wrap. Microwave on high for 2 minutes. Remove from oven and let cool so you can handle them.
Remove the plastic wrap and cut the potatoes into French fry sized pieces. Spray with vegetable spray and sprinkle/ with your favorite dry rub.
In a frying pan (preferably a black cast iron one) heat the canola oil. You need just enough oil to coat the bottom about 1/8 to 1/4 inch deep.
Fry the potatoes until they get brown and crispy on each side. Remember, they are already 90% cooked. You are just looking to get them crispy.
