Tire of rice or potatoes? This is a veggie, but can easily be a replacement for your starch.
Ingredients:
- 1 Spaghetti squash
- Olive oil or Pam
- S&P
Directions: Preheat oven to 400° F
Cut the squash the long way. Scoop out the seeds. Lightly brush with olive oil or spray the cut side with Pam. Lightly salt and pepper.
Turn cut side down on sheet pan. Poke the top a couple times with a fork to let out some steam. Bake a medium sized squash for 30 minutes and a large one for 40. Do not over cook or it will get mushy.
Remove from the oven and flip the cut side up. Let it cool a few minutes so you can work with it. Take a fork and “fluff” the meat out into a bowl making spaghetti like strands. Serve with butter.
