A Tian is a dish with thinly sliced vegetables that have been cooked in olive oil and baked topped with cheese. The amount below will fill a 9 X 13″ pan and serve up to 8-10 people. It can easily be scaled up or down as needed.
This dish is great for a crowd.
Ingredients:
- 2 Large onions cut in half and sliced
- 2 Garlic cloves, minced
- 1 pound medium red (or white) potatoes unpeeled
- 3/4 Pounds zucchini
- 1¼ Pounds medium sized tomatoes
- 1 Teaspoon kosher salt
- ½ Tablespoon fresh thyme leaves, plus a few extra sprigs
- 2 Ounces Gruyèye cheese grated (parmesan cheese is fine too)
- Olive oil
Directions: Preheat oven to 375° F.
Brush a 9 X 13 X 2 inch backing dish with olive oil. In a medium sauté heat 2 tablespoons of olive oil and cook the onions over medium heat for about 10 minutes until translucent. Add the garlic and cook for another minute. Do not brown the garlic. Spread the onion/garlic mixture on the bottom of the baking dish.
Slice the potatoes, zucchini and tomatoes into 1/4 inch thick slices. Stack them alternately in the dish on top of the onions fitting them tightly side by side. Sprinkle with salt, pepper, thyme leaves and thyme sprigs. Drizzle with another tablespoon of olive oil. Cover with aluminum foil and bake for 35-40 minutes, until potatoes are tender. Uncover, remove thyme sprigs and sprinkle with the cheese on top. Bake another 30 minutes until browned.
Serve warm.
