This will serve about 4 as a side dish.
Ingredients:
- 1½ Pounds new red or white potatoes, peeled or unpeeled, your preference
- 4 to 6 slices bacon
- 1 Medium onion coarsely chopped into 1 inch pieces
- 1 Stalk celery, chopped
- 1 Teaspoon flour
- 1/2 Teaspoon sugar
- Pinch of salt and pepper
- 1/2 Cup water
- 1/4 Cup cider vinegar
- Fresh chopped chives and parsley. About 2 Tablespoons each.
Directions:
Cut potatoes into 1 inch pieces and boil in salted water just until tender. Do not overcook or they will get mushy. While potatoes are cooking, cook the bacon in a frying pan until it is just about crisp. Remove and drain on paper towels. Discard all but 2 tablespoons of the bacon fat. Add the chopped onions and celery to the fat and cook until they are soft. Add the flour and cook for another minute or two.
Add the water slowly while stirring. The water will thicken. Add the vinegar, salt, pepper and chives and cook another minute until warmed through. When potatoes are cooked drain and place in serving bowl. Pour hot dressing over the potatoes. Top with the chopped bacon and parsley and serve.
