This is a great alternative if you are tired of the “sweet” maple syrup/brown sugar flavored squash. Serves 2-4.
Ingredients:
- 1 Acorn squash. Halved lengthwise, seeded and cut into 3/4 inch slices
- 1/4 Cup grated parmesan cheese. Plus, a little more to sprinkle on after it’s cooked
- 8 Sprigs fresh thyme, or 1 tablespoon dried
- 2-3 Tablespoons olive oil
- Kosher salt to taste
- Fresh ground pepper
- Spray oil like Pam
- Parsley or chives for garnish
Directions: Preheat oven to 400° F
Toss the squash slices, Parmesan, thyme and oil in a bowl until the squash is evenly coated. Spread out in a single layer on a cookie sheet sprayed with Pam Sprinkle with salt and pepper. Roast in pre-heated oven until squash are brown and tender, about 25-30 minutes. Do not overcook or the squash will get mushy. Use a spatula to transfer to a flat serving plate. Sprinkle with parsley and a little more Parmesan.
