We’ve tried cooking yellow squash and zucchini several different ways. Usually just steaming and serving with butter. To make it a little more interesting, we’ve steamed and then sautéd. The recipe below is simpler and more flavorful.
Ingredients:
- 1Green (zucchini) and 1 Yellow squash
- 1 Tablespoon butter
Directions:
Cut the squashes on the diagonal into 1 inch pieces. Melt the butter in a small frying pan. Add the squash and toss with the butter. Cook for 2-3 minutes until they start to brown a little. Turn the squash and brown the other side, another 2 minutes or so. Serve with the remaining melted butter from the pan drizzled over the squash.
Variation:
During the last minute, sprinkle with garlic or onion power.
