What Would Julia Child Do? Oil or Butter?

One of the jokes about Julia Child is she would always use a pound of butter when a tablespoon might do. That’s exaggerated, but if you watched any of her old shows, she did use a lot of butter.

In her defense, this was way before the health craze took hold and, if your counting, she lived until she was 92.

I’ve had her French Chef Cookbook for years. In it she sautés with both oil and with butter, but butter is the the preferred method. She never mentions why, but most likely because of the flavor. The only issue with frying with butter is it will burn if it gets too hot.

I remember her mentioning this on one of her shows. To prevent burning the butter she suggested that you sauté with a little butter plus a little oil. Melt the butter then add a little oil. This will give you the butter flavor you want but the oil will prevent it from burning.
