Sticky Korean BBQ Chicken Sauce

Sticky… and a little spicy. This recipe is best made with cooked or leftover chicken., like from a rotisserie chicken or BBQ chicken on the grill. When served over white rice it’s allot like General Tso’s. Recipe is for 2.

Ingredients:

  • About 8 ounces of cooked chicken, cut in bite size pieces
  • 3 Tablespoons honey
  • 2 Cloves garlic, minced or mashed
  • 1 Tablespoon Asian chili garlic sauce
  • 1 Tablespoon soy sauce
  • Juice from 1/2 lime
  • Chopped scallions or chives for garnish

Directions:

Put the honey, garlic, chili sauce, soy sauce and lime juice in a small saucepan and bring it to a boil. Simmer a few minutes, usually 4 or 5, until it thickens. Add the chicken and cook until the sauce is thick and clinging to the chicken. Serve over noodles or white rice and top with chopped scallions or chives.
