Grilled Meatballs

We make these from cooked Italian meatballs. We seem to always have some in the freezer. You can also make meatballs fresh for this. You will just need to grill them a little longer than we suggest below. We grill these on an outdoor grill, but you can just as easily cook them in a grill pan on the stove. The recipe below serves 2.

Ingredients:

  • 6 Pre-cooked meatballs
  • 1/4 Cup Worcestershire sauce
  • 1 Tablespoon oil
  • 1 Tablespoon brown sugar
  • 1 Large clove of garlic, mashed with a pinch of salt
  • 2 Tablespoons fresh basil, chopped, plus some for garnish
  • 1 Tablespoon fresh parsley, chopped
  • 1/4 Teaspoon ground pepper

Directions:

In a medium bowl, whisk together all the above (except the meatballs). Then add the meatballs and toss to coat. Marinate them 2 to 4 hours turning occasionally. If you are making fresh meatballs, double the amount of marinate and add half of it to the meat mixture.

Preheat grill to medium high. For pre-cooked meatballs, cook for about 5 minutes on two sides just to warm through and get some grill marks. For fresh meatballs, cooking time will depend on their size.

We serve our meatballs over a garden salad with Italian dressing.
