Traditionally, shish kebabs are meat on a skewer, but over time it’s developed into a single serving meal on a skewer. Although it looks nice serving a single skewer with some meat and vegetables on it, I have found that some things take much longer than others when cooking on the grill. For this reason, I usually do not mix meat and vegetables on the same skewer.
I make skewers with just meat, just onions, just mushrooms, etc. This way I can add them to the grill and cook each perfectly. It’s also fine to cook the vegetables in a grill pan, then you don’t need to deal with the skewers. When done, I remove them all from the skewers and serve in bowls. Serves 4
Ingredients:
- 2 Pounds sirloin tips cut in 2 inch pieces
- 1 Red Bell Pepper seeded and cut into 2 inch pieces
- 1 Green Bell PepperĀ seeded and cut into 2 inch pieces
- 1 Large onion cut into 2 inch pieces
- 8 medium sized white button mushrooms, cut in half
- 1/2 Cup of your favorite Italian dressing (we use Good Seasons)
Directions:
Skew all the meat on skewers. You will need about 4. Do not jam them too close together. Leave just some space between them so heat can surround the meat. Skew all the red and green peppers together. Skew the onions on a separate skewers and skew the mushrooms on another.
Place the skewers in a 9 X 13″ pan and pour the dressing over them. Marinate for at least 1/2 hour and up to 3 hours in the refrigerator turning a couple times so everything is covered.
Heat your grill to very hot. Times below are estimated. Every grill is different so you need to adjust for yours.
– Add the mushrooms first. Cook for about 5 minutes.
– Then add the onions and cook for about 5 minutes.
– Add the peppers and cook for about 5 minutes.
Turn all above occasionally to cook evenly.
The meat cooks the fastest, so add it now and cook about 4 minutes on each side for medium. 6 minutes on each side for medium well. As I mentioned above, every grill is different. You may need to add or reduce times above accordingly. Serve over white rice or rice pilaf.
