Arugula & Parm Pizza

Here’s a nice twist on the standard Pepperoni pizza. This will serve 4.

Ingredients:

  • 1 Pound bag of fresh pizza dough (from, your grocer’s dairy case)
  • 2 Big handfuls of fresh arugula
  • 1 Teaspoon vegetable oil
  • 1/2 to 1 Cup of your favorite red sauce
  • 1/2 Cup shredded mozzarella cheese
  • 1/4 Cup shaved Parmesan cheese
  • 16-24 Pieces of sliced pepperoni
  • 1/2 Teaspoon dried oregano or Italian seasoning
  • 1/4 Teaspoon red pepper flakes (optional)

Directions: Preheat oven to 375° F

If frozen, completely defrost the dough. Use the vegetable oil to coat an 8 X 13″ cookie sheet or 14″ round pizza pan and spread dough evenly on the pan. Cover with waxed paper and let rise for at least an hour. If you have a “Bread Proof” option in your oven, this will help it rise even more. Otherwise keep it in a warm place.

Lightly spread the sauce on the dough and sprinkle the oregano/Italian seasoning and red pepper flakes on top. Spread the mozzarella cheese over the sauce. Add the pepperoni. Cook in oven for 20 minutes or until bottom is browned and cheese is bubbly.

When you remove from the oven, spread the arugula and top with the shaved Parmesan cheese. The arugula will wilt slightly when in contact with the hot pizza. Cut and serve.
