Quick breakfasts are everywhere. Muffins, donuts, bagels loaded with cream cheese… all taste great. But, when it comes to calories none of these are on the A list.
And, like many people today, I try to cut back on the white flour intake. I just feel better every day without consuming a couple slices of toast or bagels.
But who wants to make polenta (which is really yellow grits) in the morning.?
I use the recipe on the Quaker Corn Meal package for “Corn meal mush”. Doesn’t sound very inviting, does it?
When done, pour into a 9 X 9 inch glass dish and refrigerate. When it solidifies, cut into 3 X 3 inch squares and store in a plastic container.
Then, in the morning, take 1 or 2 squares and heat in the microwave for 1 to 2 minutes. When hot, mush a little with a spoon, top with a little milk and some maple syrup and you have a easy, quick and healthy breakfast.
