Asparagus and Cheddar Stuffed Chicken

These are great for a dinner party because you can easily make then ahead and pop them in the oven when you are ready to eat… They can even be frozen. Recipe will serve 2.

Ingredients:

  • Boneless chicken for two. Each piece should be sliced or pounded to about 1/2 inch thick.
  • 1/2 Cup shredded cheddar cheese
  • 12 Asparagus spears
  • 1/4 Cup bottled Italian dressing
  • 1/2 Cup flavored bread crumbs
  • 1 Tomato sliced 1/2 inch thick
  • 1/4 Cup grated Parmesan cheese
  • 1/4 Cup water or chicken stock
  • Drizzle of olive oil
  • S & P

Directions: Preheat oven to 375ยบ

Marinate the chicken in the Italian dressing for at least 1 hour. Cut the woody stems from the asparagus. In a large frying pan, bring about 1/2 inch of water to a full boil. Drop in the asparagus and boil for only 90 seconds. Drain, then run under cold water to cool.

Layout marinated chicken. Place cheddar cheese in the center of each piece and add 6 asparagus spears to each. Roll them up and secure with toothpicks. Coat with flavored bread crumbs and place in a 10 X 10 oven proof pan. Top with a slice of tomato and the Parmesan cheese. Drizzle with olive oil. Pour the stock or water around the chicken pieces. Bake for 30 minutes.
