Awesome Crowd Pleaser Chicken Divan

This was one of Susie’s first recipes going WAY back. In fact it was published in the Excite! Dance Company Cook Book back in 1987.

You can also easily omit the chicken and serve this as a great vegetable side dish. Serves 4.

Ingredients:

  • 2 Whole boneless chicken breasts cut in 1 inch cubes (about 1 pound of chicken)
  • 2 Crowns of broccoli, cut in bite size pieces
  • 1 Can cream of chicken soup (or The Net Gourmet substitute)
  • 1/2 Cup mayonnaise
  • 1 Teaspoon (or more to taste) curry powder
  • 1 and 1/2 cup grated cheddar cheese
  • 1 Sleeve Ritz or Town House crackers (crushed)

Directions: Preheat oven to 350º

Spread chicken evenly in a lightly greased 9” X 13” baking dish.  Spread broccoli over chicken. Combine soup, mayo and curry powder in a small bowl and spread over broccoli. Sprinkle cheese over mixture then top with crushed up crackers.

Cover with foil and bake for 50 to 60 minutes until temp in center reaches at least 165º. Uncover last 15 minutes to brown crackers. Let stand 10 minutes before serving. Serve over buttered egg noodles or white rice.
