This is a great recipe if you are having a gang for and elegant breakfast. The waffles can be made ahead of time (even a day ahead) and kept warm in the oven. Then all you need to do is assemble when you are ready to serve. Of course, you need a waffle maker for this.
Ingredients:
- Your favorite pancake/waffle mix
- 1 Pint fresh strawberries
- 2 Tablespoons sugar
- Maple syrup
- Can of real whipped cream
Directions:
Cut strawberries in half or in quarters if they are large and place them in a bowl. Sprinkle them with the sugar and place in the refrigerator for at least an hour. Overnight is fine. This will soften the berries and create some juice.
Make the waffles according to package directions. Keep them warm in a 250° oven until ready to serve. We also made tiny waffles using a heaping tablespoon of mix to garnish the top.
Assemble when ready to serve. Place one waffle on the plate, top with some strawberries, whipped cream and drizzle with maple syrup. Garnish with a tiny waffle and serve.
This also works great as a desert.
