The Basic Frittata

Generally speaking, the only time to cook a frittata is when you have leftover vegetables already in the refrigerator. It’s important that everything you add to a frittata is fully cooked because the eggs cook so fast. So, literally, any leftover veggie is fine… like cooked broccoli, carrots, onions, peppers, cubed squashes, cubed potatoes and much more.

The only vegetables to add that do not need cooking are chopped seeded tomatoes and baby spinach. Cooked bacon and/or cheese can be added to the frittata prior to pouring in the egg mixture or they can be sprinkled on top right at the end. I prefer the latter. This recipe is for 2. You also need a heavy non stick frying pan or black skillet.

Our frittata is shown with cooked zucchini, onions, red peppers and chopped onions, served with home fries. We’ve omitted the cheese and bacon.

Ingredients:

  • 4 or 5 eggs
  • 2 Tablespoons whole milk
  • 1/2 Cup of chopped cooked vegetables
  • 3-4 Strips of cooked bacon, chopped, Optional
  • 1/4 Cup shredded cheese (mild cheeses recommended) Optional
  • Vegetable spray
  • 1 Tablespoon butter
  • 1 Teaspoon fresh herbs like thyme or oregano (anything you like). Optional
  • Salt & Pepper to taste

Directions: Preheat oven to 375° F

Make sure everything is ready to go and the oven is hot prior to starting. In a bowl scramble the eggs with the milk. Add a pinch of salt and pepper. Liberally spray the pan with vegetable spray. Bring up to medium high heat on top of the stove. Add the butter and melt. If you want the bacon and/or cheese in the frittata, add them to the pan now. Pour in the egg mixture and then scatter in the rest of the veggies. If you have herbs, sprinkle them over the eggs. Cook on top of the stove for a minute or two just until the eggs start to set around the edge. Place in the hot oven and cook for about 10 minutes. Cut into the center to be sure all the eggs are set. If not return to the oven for another minute or so.

If you want cheese and/or bacon on the top, add it now and return to the over just until the cheese melts. Remove from the oven and let cool for a couple minutes. Cut in wedges and serve.
