Baked Fish w/ Lemon Cream Sauce

This is very simple and very tasty. We show this served over mashed potatoes with green beans on the side. Recipe below will serve 2 to 4 depending on how many pieces of fish you use. Use any white fish. If it is thicker than 1/2 inch, increase cooking time about 5 minutes.

Ingredients:

  • 4-6 Fish fillets about 4 ounces each
  • 4 Tablespoons melted or soft butter
  • 1 Large clove of garlic, smashed
  • 1/4 Cup Cream or Half and Half
  • 1 1/2 Tablespoon Dijon mustard
  • 1 1/2 Tablespoon fresh lemon juice
  • 2-3 Tablespoons finely chopped green onions
  • S & P
  • Fresh chopped parsley and lemon wedges for garnish

Directions: Preheat oven to 400° F

In a microwave container, place the soft/melted butter, cream, garlic, mustard, lemon juice and salt and pepper. Microwave 60 seconds stirring once halfway through.

Place fish in baking dish large enough where they don’t touch each other. Lightly salt and pepper the fish. Sprinkle the fish with the onion then pour over the sauce. Bake uncovered for 15 minutes until fish is cooked and sauce is bubbling. If you must cook fish longer because it is thicker you may need to add a couple tablespoons of water to thin the sauce a little.

Garnish with parsley and lemon.
