The Perfect Fish Sandwich from Leftover Fish

Leftover fish? I hear you say “yuck”. I know, it doesn’t re-warm well in the microwave. So don’t.

If you have looked around here at The Net Gourmet you may have noticed that we try to fine tasty ways to use leftovers. This fish sandwich is made from a fish dinner where we took petite cod (which are just small cod fillets) dipped in flour, egg, then flour again and cooking in a little oil. Somewhat like we did for this dish.

We make our own tarter sauce for a nice twist.

Ingredients:

  • 2 Pieces any cooked flat fish.
  • 1 Tablespoon sweet relish
  • 1 Tablespoon mayonnaise
  • 2 Soft rolls
  • 1 Tablespoon butter for cooking

Directions:

Melt the butter in a medium frying pan on medium low heat. Rewarm the fish in the butter just until it’s warm and starts to brown a little more.

Mix the relish and mayo in a small dish.

Assemble the sandwiches and top with some tarter sauce.

Serves 2.
