There are dozens of ways to make shrimp scampi. This one is simple and fast… and it tastes great. Serves 2.
Ingredients:
- 12 Jumbo shrimp. Raw, peeled and deveined are best, but cooked are OK.
- 1/2 Pound pasta like linguini or spaghetti
- 2 Tablespoons butter
- 1/3 Cup white wine or chicken broth
- 2 Tablespoons lemon juice
- 3 Cloves garlic, crushed
- 1/4 Teaspoon red pepper flakes
- 1 Green onion (scallion) sliced
- S & P to taste
- Optional: 1/2 Cup fresh asparagus cut in 1 inch pieces
Directions:
Cook pasta according to package instructions to firm or al dente. Melt the butter in a medium frying pan. Add the garlic and sauté until the garlic releases it’s aroma. Be careful not to brown the garlic. Add the wine/broth, red pepper, green onion, asparagus pieces, lemon juice and the shrimp if it is raw. Cover and and cook for 5 or 6 minutes until shrimp are done. If your shrimp are pre-cooked, add at the end so they warm.
When the pasta is done, drain and toss in the pan. and mix so all the pasta is coated.
