Grilled Watermelon with Tomato & Kalamata Salsa

Here is one that will dazzle your guests.  People never expect to see a grilled watermelon, and many are reluctant to take the first bite. But, that is where the apprehension ends. Serves 6

Ingredients:

  • 6 Wedges of watermelon cut 1½ inch thick
  • 3/4 Cup seeded Roma tomatoes chopped
  • 1/4 Cup Kalamata olives, pitted and cut in half the long way
  • 1/4 Cup chopped green onions
  • 2 Tablespoons minced shallots or minced red onion
  • 1/2 Cup white wine vinegar
  • 1 Teaspoon Dijon mustard
  • 1/4 Cup Extra Virgin olive oil
  • S&P to taste

Directions:

Make the dressing first, so flavors blend while you are grilling the watermelon.

In a bowl, whisk together vinegar, shallots, Dijon and oil.  Stir in tomatoes, olives and scallions. Reserve. Grill watermelon on a hot grill just until it gets marked with grill marks. You are not trying to cook the watermelon, just mark it. Place one piece on a plate and top with the dressing.
