Twice Baked Potatoes

When you want something special, give this a try. Serves 2.

Ingredients:

  • 2 Large potatoes. Russets are best, but any potato will do.
  • 1/4 Cup chopped red onion (or green onion or red or green bell pepper)
  • 2 Tablespoons chives, plus one more for garnish
  • 2-3 Tablespoons sour cream
  • 2-3 Tablespoon milk or cream
  • 1 Egg, beaten
  • S & P to taste

Optional:

  • Shredded cheese for the top
  • Crumbled bacon bits

Directions: Preheat oven to 375° F

Bake potatoes in the oven for 1 hour as you would when you cook any baked potato. Remove from oven and cut them in half the long way. Let sit 20 minutes to cool. When they are cool enough to handle, scoop all the potato out of the skins into a mixing bowl. Add the milk and mash them until smooth. Add the remaining ingredients to the potatoes and mix well.

Put one quarter of the potato mixture in each of the potato skins. Top with shredded cheese and some bacon bits if you want. Bake for another 20-30 minutes until top is golden brown and potatoes are warmed through. Our image shows topped with bacon bits, but no cheese.
