Zucchini Sauté

This is a very simple recipe if you have a mandolin to cut the zucchini into matchsticks. You could also do it on a spiralizer. Enjoy this with or without adding the Parmesan cheese. Serves 2.

Ingredients:

  • 2 Medium size zucchinis
  • 2 Garlic cloves minced or mashed
  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 2 – 4 Tablespoons of grated parmesan cheese (optional)
  • Salt and Pepper to taste

Directions:

Cut the ends off the zucchinis, but do not peel them. Cut them into 1/8th inch matchsticks. They need to be thin so they cook really fast.

Heat the oil and butter in a medium size frying pan. Add the garlic and sauté for about a minute. Do not brown the garlic. Add the zucchini and toss in the garlic butter for one minute. You just want to warm them through. Turn off the heat and add two tablespoons of the grated cheese. Give them another toss to mix. Taste and add salt and pepper (and more cheese) if needed.

Variation:

This is great if you add some carrots. It’s best if you use the fattest carrots you have. Run two carrots through the mandolin to make matchsticks. Cook the carrots for a couple minutes, then continue with the recipe above.
