Poor Man’s Escargot or… Faux-cargot

Not many people like escargot, but every time I order it everyone at the table wants to dip their bread into the garlic butter. This recipe tastes exactly like escargot… without the snails. Serves 4 to 6.

Ingredients:

  • 12″ French baguette, cut into 1/2 inch slices
  • 4-5 Cloves of garlic, chopped
  • 1 Stick butter cut in 8 pieces
  • 10oz White mushrooms, cut in bite size pieces
  • 2 Tablespoons chopped fresh parsley, plus a little for garnish

Directions: Preheat oven to 400° F

Place 4 pieces of butter in the bottom of a 10″ casserole dish, Then put the cut mushrooms and parsley in and top with the rest of the butter. Bake uncovered for 15 to 20 minutes stirring once.

The juices from the mushrooms will mix with the butter to create a wonderful garlicy sauce. Garnish with a little fresh parsley. Serve right from the hot casserole dish by scooping the sauce and a couple mushrooms onto a slice of French bread.
