Known in some areas as “American Goulash”. There are hundreds of recipes for this dish and many have a laundry list of ingredients. We keep it simple. Traditionally you will find all have chopped onion and green bell peppers. We sometimes substitute red peppers as in our image. Serves 4-6.
Ingredients:
- 1 Pound elbow or similar pasta
- 1 Pound ground beef
- 1 Small onion chopped
- 1/2 Green (or red) pepper chopped
- 1/2 Cup water
- 1/2 Teaspoon Sugar
- 2 Tablespoons oil
- 1 28oz. Can Kitchen ready tomatoes
- 2 sprigs of fresh thyme (or 1/2 teaspoon dried)
- Salt and Pepper
Directions:
Cook the pasta according to package directions for “al dente”.
In a large frying pan, heat the oil and add the chopped onions and peppers. Sauté until soft then add the ground beef and cook until done. Add the tomatoes, thyme, water, sugar and some salt and pepper. Let simmer for 10 or 15 minutes so the flavors come together (just about the amount of time to cook the pasta). Stir into the drained pasta.
Note: The amount of sauce this recipe makes will easily be enough for 1 1/2 pounds of pasta if you need to stretch it.
