This is an easy and delicious way to use red peppers. Serves 2.
Ingredients:
- 1 large red pepper
- 1 large garlic clove. cut in half then sliced thin
- 1 Tomato (or 2 Campari) cut to bite size pieces
- 10 – 12 Kalamata olives cut in half
- Olive oil to drizzle
- S & P to taste
Directions: Preheat oven to 375° F
Cut the large red pepper in half. Remove the seeds but leave the stem. Place half the tomato pieces and Kalamata olives in each, then tuck in the slivers of garlic. Drizzle the olive oil to coat everything. Salt and pepper. Place them on a cookie sheet or in an oven proof pan. Roast uncovered for 20 minutes in the oven or until the peppers are tender.
