Chili In A Butternut Squash Bowl

We’ve seen chili served on top of spaghetti, burgers, hot dogs taco chips and a dozen other things. So, when I was scooping the seeds out of a butternut squash the other day I though what a great bowl to serve chili in.

You can use any chili recipe you like for this dish. In our image, we are only using the “bowl” part of the squash to serve the chili. This is because we used the neck of the squash in a dish where we spiriliazed it and this is what we had left over. I would suggest using the whole squash, it really makes a meal out of it.

Ingredients:

  • Your favorite chili recipe like The Net Gourmet’s Steak In A Bowl Chili
  • 1 Medium sized butternut squash
  • 2 Tablespoons of butter

Directions:

Preheat oven to 350ยบ F

Cut the squash in half the long way and scoop out the seeds. Place on cookie sheet cut side up and spread 1 tablespoon of butter over the cut areas. Place in the center of a hot oven,.

If you are using the entire squash it will take 50 to 60 minutes to cook. If you are using just the bulb (or bowl) area, it will take 30 to 40 minutes to roast.

Serve chili in the scooped out area and top with your favorite chili toppings like sour cream, onions, cheese etc.
