Bolognese #1

This is a healthier Bolognese than most because it has no cream… and it is easy to make Serves 4

Ingredients:

  • 2 Teaspoons olive oil
  • 1 Onion, chopped
  • 1 Celery stalk, chopped
  • 1 Carrot, minced
  • 2 Cloves garlic, minced
  • 1 Pound lean ground turkey or beef
  • 1 28 Ounce can diced or kitchen ready tomatoes
  • 1/4 Cup chopped parsley
  • 1/4 Cup red wine (or beef broth)
  • 1 Bay leaf
  • Salt & Pepper to taste
  • 1 Pound Ziti or other pasta
  • 1/4 Cup Parmesan cheese for garnish

Instructions:

Heat the oil in a large pan. Add onion and cook until soft, 4-5 minutes. Add the celery, carrot and garlic. Cook stirring frequently until all the vegetables are soft. About another 5 minutes. Add the ground turkey (or beef) and cook until done, usually 5-8 more minutes.

Stir in the tomatoes, 1/2 the parsley, wine, bay leaf, salt and pepper. Reduce the heat to simmer and cook with the top off the pan for about 20 minutes till thickened. Discard the bay leaf.

Cook pasta according to package directions. Drain and add to the pasta sauce. Remove from heat and toss. Transfer to serving platter and top with the cheese and remainder of the parsley.
