Friday Nite Pizza

Tired of take out? All you need to do is keep a bag of fresh dough in the freezer for those times when you want a pizza and you don’t want to bother with take out. Frozen dough takes an hour or two to defrost on the counter and another hour to rise after you spread it out in the pan. The recipe below can be adjusted for whatever topping you have on hand. With a small salad on the side, this will serve 4.

Ingredients:

  • 1 Pound bag of fresh pizza dough (from, your grocer’s dairy case)
  • 1 Teaspoon vegetable oil
  • 2 Teaspoons olive oil
  • 1/2 to 1 Cup of your favorite red sauce
  • 1 Cup shredded mozzarella cheese
  • 16-24 Pieces of sliced pepperoni
  • 1/2 Cup of cooked sliced mushrooms
  • 1/2 Small onion sliced thin
  • 1/2 Red bell pepper sliced in thin strips
  • 1/2 Teaspoon dried oregano or Italian seasoning

Directions: Preheat oven to 375° F

If frozen, completely defrost the dough. Use the vegetable oil to coat an 8 X 13″ cookie sheet and spread dough evenly on the pan. Cover with waxed paper and let rise for at least an hour. If you have a “Bread Proof” option in your oven, this will help it rise even more. Otherwise keep it in a warm place.

Lightly spread the sauce on the dough and spread the cheese over the sauce. Add the pepperoni. For raw vegetables like onions and peppers, toss them with a couple teaspoons of olive oil first. Sprinkle oregano or Italian seasoning over the top. It’s important not to load on too many toppings.

Cook in oven for 20 minutes.
